Located in the rural parish of St. Mark, the 200-year old, 15-acre estate has been lovingly restored into a fully working commercial organic farm. This estate is off the beaten path, offering an authentic Caribbean experience centered around the growing of organic cocoa and the curation of a rich dark chocolate. The owners Kim and Lylette Russell offer a true ‘Tree to Bar’ experience in which one can visit the cocoa fields, harvest the pods like a farmer and witness the fermenting, drying and roasting of the beans in the boutique chocolate factory. These processes are largely achieved through processing machinery, the most special of which is a uniquely designed roaster, the only one of its kind in the world. Crayfish Bay’s organic dark chocolate is made with 75% cacao, a true delight which melts in the mouth with a smooth texture.

The wonderful story behind this estate is that the land is controlled by local Grenadian farmers who look after the land and grow the cocoa and other crops in exchange for receiving top dollar for their produce in a unique fair-trade system. The estate also offers rustic self-catering accommodation to those wanting something different from the usual beach holiday

The estate’s environs hold a lot of history with visible remains of a French Molasses Factory and iron bridge, one of the oldest in the Caribbean.
